Sarah Jo emailed me with the recipe that she, Gabby, and Katie made for their group Friday night dinner a few weeks ago. Although the recipe is loosely based off of this one from the Food Network, it was mostly a creation of their own.
“Basically, we sautéed shrimp, (cooked) chicken, broccoli, and spinach (we added the spinach last, so it only cooked for like 30 seconds or a minute and didn’t get too wilty) with olive oil, garlic, red pepper flakes, parsley and basil. Then we mixed that in with cooked pasta and VOILA! It was delicious and pretty simple.”
It sounds like it would be a quick and tasty weeknight dinner! Bekah and I will have to try it soon.
